    Black Cumin Seed Oil (also often called Black Coriander Oil or simply Black Oil) comes from the Nigella Sativa plant that is native to Asia. Researches shown that the oil has incredible medical properties for various health conditions and diseases such as cancers. However, the main problem with direct consumption is with regards to its smell which is categorized as spicy and very penetrating smell.

Project Overview

In Arabic cultures, black cumin is known as Habbatul barakah, meaning the "seed of blessing." It is also believed that the Islamic prophet Mohammed said of it that it is ‘a remedy for all diseases except death’. Interestingly, its taste and smell have been a reason for not being consumed directly. Currently, the oil is packed as in its original liquid form in a dark bottle to avoid it become rancid due to exposure to light. For better shelf life, the oil also has been converted into hard capsules and soft gelatin capsule for easy consumption by children and elderly. However, there is a need to keep the oil as in its original liquid to maximise it health benefits as part of additional supplementary. Hereby, a group of researchers have invented a way to mask the bad taste of black seed oil for easy consumption at all level. The innovative technique involves the encapsulation of the bad-tasted material i.e. black seed oil in alginate beads. Alginate beads are easy to prepare by dropping the alginate containing the oil in form of emulsion, in calcium ions solution (calcium chloride or calcium lactate). By having it encapsulated in alginate beads, the black seed oil can be sold as intermediate-product to food companies to incorporate it in other final products. By this method, the value and nutrients of black seed oil is preserved while people can enjoy it in many other forms of foods.
